Pandan Coconut Cookies

Having recently been reaquainted with my childhood favourite Pandan Chiffon Cake, I saw these Pandan Coconut Cookies a day later over at Jin's blog Smell and Taste Are My Memory. I thought I should continue on my pandan theme and try out these cookies.

The cookies were ultra easy to make. You just mix everything together. And the batter tastes really really good. It tasted so good that I must have eaten a few tablespoons of it. However, once the cookies were baked, the pandan flavour was lost. I think I have to put in more pandan flavouring in future. However, it still tasted like a really really yummy coconut biscuit. It had a crunch on the outside without being dry on the inside. I really like the glace cherry flavour when you get to the centre of the biscuit.



INGREDIENTS
120 g butter
100 g icing sugar
1/4 tsp salt
100 ml coconut milk
1 tsp pandan paste (I used 1 tsp of pandan flavouring)
200 g plain flour
1/2 tsp baking powder
90 g desiccated coconut (lightly toasted)
Glace cherries for decoration

METHOD
(1) Cream butter, sugar and salt till creamy. Add in coconut milk and pandan paste and mix thoroughly.
(2) Seive flour and baking powder together and then mix in the desiccated coconut. Pour into the mixture and mix till a soft dough is formed.
(3) Using a spoon, roll dough into balls (about 1 inch). Place on a lined baking sheet and flatten slightly. Place a small piece of red cherry on top.
(4) Bake at 165C for about 15 to 20 mins.l until it's cooked and crispy.
(5) Leave to cool thoroughly before storing in containers.

  2. Anonymous, it's probably the same toxic waste that you ingest that makes your flatulence so lethal that even the dog fainted when he smelt it. :-)

  4. Very funny, I like this one. It is a very strange luminescent green. Everyone kept saying that it looked like it had radiation on it. Tastes good though.

    I've noticed that the only word you evr use to describe some thing that tastes good is yummy!!!

  7. Anonymous 1, I do agree that I use the word yummy too much. I have to work on increasing my vocabulary and using other adjectives rather than yummy.

    Anonymous 2, we should both read Howtobehaveatguesthouses. You shouldn't just use people's computers and I shouldn't just switch on your TV.

    It is not me that goes to other people's houses and using any of their appliances without asking.

    And the issue isn't about asking whether they can use it or not. As i said many times. You are free to use anything without asking PROVIDED myself and no one else is about to use it or are using it.

    So the next time my DS is the the table, please feel free to take it and play with it. But if I pick it up first and about the start a game, DON'T YOU EVER whinge and whine about not sharing it and that I get to play any other time of the day. Common sense Do Flow.!!!

  9. I love pandan - takes me back to when I was really young and we lived over in Asia. I love the lurid green of these babies. I can see a St Patricks Day feast in the making :) They'd make a nice addition to a green-food-laden table!

  11. Hi Thanh. Yeah, we lived in Malaysia for a couple of years, a bit over 20 years ago now (showing my age), and then hopped around Singapore, Thailand and Indonesia for a little while. It was fantastic... I'd love to go back and see all the places we lived now, see what's changed.

    One of the many things that are different now in Vietnam compared to 20 years ago is that there is not that many fat people like yourself. So if you go back now, people will definetely see you in a different light since you're large enough to block the sun.
